Not to be outdone with our newly classified Nectaron, the Americans have a new hop of their own: ‘Talus’ (formerly HBC 692), and it’s starting to find its way into our beers. Sweet grapefruit is dominant on the nose here, with some turkish delight and (uniquely) crushed sage leaf. Delicate and extremely herbal on the palate, with more sage along with thyme and rosemary. Balanced bitterness and a long, intricate finish. A unique and very curious pale that concisely describes what the talus hop has to offer.
